The Henderson continues to raise the bar for Hong Kong’s dining scene with its latest opening: Peridot, a breathtaking plant-based restaurant and cocktail lounge perched on the 38th floor at Summit 38. Sleek, luminous, and forward-thinking, Peridot fuses culinary artistry with cutting-edge mixology, all framed by panoramic views of the city skyline.
Named for the vivid green gemstone, Peridot glows with the same brilliance. Step inside and you’re met with a soft, luminous space washed in pale greens and glassy reflections. More than 20,000 hand-crafted lights ripple across sculptural marble and polished brass, surrounding guests in a halo of subtle radiance. It feels futuristic yet organic, the kind of room that makes time slow down and conversation linger.
Behind the bar, Director of Beverage François Cavelier leads a truly pioneering concept: a global terroir cocktail programme inspired by the distinct character of the world’s soils, climates, and regions. His quarterly-rotating menu explores how geography shapes flavour, turning each cocktail into a liquid expression of place. Expect spirits infused with mineral notes, herbal distillations, and rare ingredients sourced to mirror the earth that birthed them.
Complementing this is a fermentation-forward, plant-based menu by Chef Lisandro Illa, whose tasting menus and bar snacks promise to redefine vegetarian haute cuisine. Think bold textures, umami-rich ferments, and dishes that reimagine vegetables as the stars of fine dining.
